July Recipe: Fruit Salad

It’s summer – and we all enjoy something refreshing on a hot day!

Fruit salad does the trick. It’s a “treat” – lots of carbs (sugar) – and satisfies the sweet tooth in all of us – while providing nutrition and hydration.

Some keys to making a great fruit salad:

1. Canned, fresh – doesn’t matter. But avoid canned fruits with syrup or added sugar. Also: Add bananas right before serving (they do turn to mush if you add when mixing!)

2. Mix it up! Use a mixture of berries, citrus – have fun and use lots of color. 

3. Fruit salad will spoil quickly – even if refrigerated. Use fresh, washed, ingredients. Make only enough to be eaten in 1-3 days.4. Do not add sugar. Fruit is full of natural sugar – and over time, your taste buds will notice. 


Ingredients:

Orange * Grapefruit * Tangerine * Mandarin OrangesCherries * GrapesDates * Figs
Pineapple * Mango * Papaya * KiwiStrawberries * Blueberries * Raspberries * BlackberriesBananas * Coconut * Nuts * SeedsMint * Spices

Directions:

  1. Wash, cube or dice, and mix your chosen fruits in a large bowl.
  2. A splash of lemon or lime juice (strain for pips / seeds) will help balance the sweetness and help your salad stay fresh. 

Our Director’s favorite fruit salad: ½ Watermelon (seedless), 1 tub blueberries, sprigs of mint, lemon juice.
